I've become a fan of Dr. Praeger's Spinach Pancakes. I first saw them in my local supermarket in the
frozen section. I was a bit hesitant at first thinking that it may be a processed food masquerading as a
healthy food, but upon closer inspection of the ingredients, I was pleasantly surprised.
Spinach, Potatoes, Onions, Egg Whites, Oat Bran, Expeller Pressed Canola Oil, Arrowroot, Salt, Garlic, Pepper, All Natural Vegetable Gum
The instructions say to broil them, and I have and they come out pretty good, but I've found that dropping
them into the toaster set on high produces a decent outcome (your results may vary).
Get a piece of light whole wheat toast, slice that in half for two pieces, top of the patty with a bit of fat free mozzarella and you've got yourself a mini meal or snack that is pretty good for you and tasty too.
